There’s a very specific moment we all recognize.
You slice a tomato. Red, glossy, perfectly ripe. You take a bite… and suddenly, that deep, authentic flavor appears. The real one. The one you remember.
That moment, even if it doesn’t seem like it, starts much earlier.
It starts now.
With the arrival of spring, at Restoledo we return to the land. These days, we’re planting our summer garden: Moruno tomatoes and zucchinis, for now. Ingredients that will grow steadily and eventually become part of what we serve in our restaurants.
It’s not just about the season. It’s a way of doing things.
We choose to be involved from the very beginning. To follow the natural timing of the land, to understand the product before it even reaches the kitchen, and to care for it throughout the entire process. This is how we achieve something simple, yet hard to replicate: authentic flavor, freshness, and character in every dish.
Our “farm to table” project is built on exactly that. On working the raw ingredients from the start, caring for them and respecting them so that, when they reach the plate, they speak for themselves.
And doing so responsibly. By supporting agricultural practices that respect the environment and allow us to move toward a more sustainable model.
